Why does cooking oil get black after it is deep fried repeatedly?

oxidized carbon bodies, or the combustion of carbon chains into Oxide bodies yields dark, or amber oils and organics.Why does cooking oil get black after it is deep fried repeatedly?
It gets black from particles of burnt food in it. The more you fry the more particle stay in it and continue to burn and turn black.
