If you have a self cleaning oven I usually stick the pan in there for the duration of the clean. Be careful though because things like non stick teflon pans, cake tins and cheaper roasting pans can lose their finish doing it this way - otherwise good old SOS pads and a bit of elbow grease should work!How to remove oil stain that has hardened on a cooking pan?

cut a potato in half and put detergent on it and scrub scrub scrub

Soak the pan for a while, then make a paste of baking soda and water. Use the paste to scrub off the stain. It will probably take a lot of scrubbing, but it should come off.
