The best cooking oil is Olive oil BUT it is very delicate and high heat can destroy it. Many people prefer to add olive oil to the dish after the cooking so as to impart flavour. Try using a spray on oil (get a pump bottle and fill it with olive oil) to do the cooking first. You use so little, almost no cholesterol fats are added to your food. People without documented coronary heart disease eat a variety of (preferably oily) fish at least twice a week. Include oils and foods rich in alpha-linolenic acid (flax seed oil, and soybean oil; flax seed and walnuts) Avoid using Canola oil as it is very high in uric acid and is especially harmful to men's prostates.
