Which oils are safe 2 heat when cooking? in some cases, its dangerous, in other cases, oil loses its benefits?

any oil should be fine- it just depends on how much oil you have, and how hot it is. Olive oil is great, peanut oil is good for deep frying poultry, etc.

Healthy and safe is canola and sunflower.
if you are cooking at a very high temperature (deep frying, pan frying, stir-frying in a wok), use canola oil or peanut oil - both have very high smoke/flash points and will take the heat.





if you are quick sauteing, extra virgin olive oil is fine - just get the food into the pan before the oil smokes.





delicate and highly fragrant oils (walnut, flax seed, grape seed, sesame) should never be used to cook, only added to a dish at serving or just after removing the food from heat in order to preserve their healthful and taste qualities.
If you plan to cook a lot of things at once and the oil will stay hot for a long period, then use Peanut oil.It is pricey but worth it.Canola is good for home small fry jobs...
Safflower, canola and peanut
For deep-frying I would use peanut oil or regular old vegetable oil (soybean oil) because they can take the high heat needed for that. When I saute something on the stove I use olive oil, which is good for you. Less of the ';bad'; fats in olive oil.
