Hi,

Veg oil will do it, lard is better.

However, I have duck fat in my chip pan.

Sounds disgusting, but I guarantee that if you par-boil the chips, and chuck them, dried off, into hot duck fat, it makes the perfect chip.

Crispy outside, fluffy inside, and tasty.

You can get lumps of it from butchers shops

Happy chipping !
Chip shops used to use Beef Dripping. It was great, if it was fresh. Not good for the health though. Lard is minging for chips. It can't be just any old oil. I quite liked the results from Groundnut (peanut) oil.
try cutting your spuds into 1/8 Th's par boil them, then shallow fry them in a little peanut oil,if you are really adventurous then you could egg wash them and crumb them in finely crushed potato chips, and then bake them.
For the very best flavour use the lard. For the healthier option it must be the oil. For an even better flavour use beef dripping.
polyunsaturated vegitable oil; sunflower or olive oil is best
Cooking oil. Lard would give it a slight meaty taste. You want vegetable oil chips like what you get in the store.
Lard definately, but only once in a while - it's so bad for you!
Cooking oil. There is a chip shop near me that uses lard to fry chips and they taste bloody horrible!
