Probably you could but personally I can't stand the taste of margarine and because it is so processed I don't think it is particularly good for you either. There is probably enough fat in the chorizo that you don't need oil. Try cooking it on a lower temperature so the fat from the sausage oils your pan rather than the margarine.

Sure. But use the oil as it is neutral in flavor. Let us know how it is. I like chorizo but never have or will try the soy stuff.
