Like you know recipes call for the types of cooking oils: extra-virgin olive oil, vegetable oil, canoila oil, olive oil , corn oil and etc.
Why can we not just use like any type of oil ? Is there a difference?

There is difference in flavor, and in the temperature at which they smoke. There are also some nutritional differences; olive oil is supposed to be heart-healthy and better for you than some others.
Extra virgin olive oil is much more expensive that regular olive oil. It also has more intense flavor, and is often used in salads, or just drizzled over finished dishes to add its distinctive flavor. It is not good for frying, because it breaks down at high temperatures.

Canola oil and Olive oil both have the good type of saturated fat.
Vegetable oil, corn oil, and peanut oil have the bad type of saturated fat...Good sat. fats help fight cholesterol in the body.
The type of oil that you use depends on what you are making. If you are making a salad dressing, I would use Canola or Olive oil. If you are frying french fries use peanut oil...it can withstand a higher temperature. You can pretty much use any oil interchangeably it's mainly the health benefits that change.

there is a differenc in flavor due to what it came from but the real differnce is the smoke poin t or how hot u can cook at it with, for instance peanut oil is good for frying and olive, evvo, and vetable r good for pan frying.

The main difference is flavor (ignoring health) Olive oil itself comes in many varities, and each offers something different. Rape seed oil is flavorless and is used alot for that reason.
Another major differnce is the flash point. That is the temp. the oil will burn. Having an oil with a high flash point is crucial to successful flash fry something. Blackened snapper for example needs to be done in a oil with a very high flash point.
Oils taste different. Extra virgin olive oil is for eating, peanut oil (which has a very distinct taste) is used for sauteing. You wouldn't put peanut oil on your bread.
If you are making a cake or cookies you can interchange oils (say safflower for corn for vegetable for canola) as long as they are mild tasting (no peanut oil). If you are deep frying you need to take a very close look at the temperature you'll be cooking at and the smoke point of the oil. (Canola has one of the higher smoke points and is what I use for fish and chips).
There are some different nutrition benefits to different oils. Flax seed oils is supposed to have those good Omega-3s, olive oil raises your good cholesterol, canola oil is low in saturated fat, etc.

It depends on what you are using the oils for. For example, Olive oil is best for salad dressings because of its flavor and it is a healthier oil. Olive oil can never be used for stir frying or deep frying because it has a very low smoke point (temperature at which it starts to smoke). Vegetable oil is a very non-descript oil with very little flavor by higher smoke point.
